Dressing:
2 tbsp rice vinegar
2 tbsp low-sodium soy sauce
2 tsp E. EXCEL Essential Blend
Crushed red pepper to taste

Stir Fry:
1 ½ c water
1 ½ c raw quinoa
1 tbsp E. EXCEL Essential Blend
1 c chopped onion
2 cloves garlic, minced
2 c red pepper strips
2 c sliced mushroom
2 c sliced asparagus
½ tsp salt
1 (12.3 oz) package reduced-fat firm tofu, drained, cubed
2 tbsp sesame seeds

Directions:

Combine all dressing ingredients in a small bowl. Stir with a whisk, set aside. Bring water to a boil in a small saucepan. Stir in quinoa, cover, reduce heat, simmer for 10 minutes. Remove from heat, let stand covered for 10 minutes. Fluff with a fork.

Heat 1 tbsp E. EXCEL Essential Blend in a large nonstick skillet over medium-high heat. Add onion and garlic, stir-fry 5 minutes. Add bell pepper, mushrooms, asparagus, salt, and tofu, stir-fry 3 minutes. Stir in dressing. Serve over quinoa and sprinkle with sesame seeds.
